Filet Mignon Among Options on Oct. 17

Williamson Hall Dining Room will be the location for students from the Arkansas Tech University Department of Parks, Recreation and Hospitality Administration to once again display their culinary and hospitality talents on Thursday, Oct. 17, during the continuing fall 2013 dinner series. Cost for this week’s meal will be $19.95 (plus tax) per person. Reserved seating times are available from 6-7 p.m. Members of the Arkansas Tech campus community and residents of the surrounding area are invited to attend. Below is the menu for the Thursday, Oct. 17, dinner at Williamson Hall, with descriptions of the meal from the Department of Parks, Recreation and Hospitality Administration in quotation marks: Appetizer Hot Artichoke Spinach Dip “A Tasty Blend of Spinach and Artichokes Served with Toasted French Baguette.” Salad Poached Apple Salad “Poached Red Apples in Red Wine, Strawberries, and Cloves over Mixed Greens Topped with Red Wine Honey Vinaigrette.” Entrée Filet Mignon “An Impressive and Unforgettable Cut of Meat from the Finest Beef Tenderloin Topped with a Bordelaise Sauce; Served with Parmesan Roasted Potatoes and Grilled Asparagus.” Or Chicken Marsala “Herb-Seasoned Chicken Breast Sautéed with Fresh Mushrooms in a Rich Marsala Wine Sauce; Served over Bow Tie Pasta.” Dessert Crumbled Apple Cheesecake Bar “A Cheesecake Bar Layered with a Buttery Crusty, Creamy Cheesecake, Cinnamon-Sugar Coated Apples, Streusel Topping and a Drizzle of Rich Caramel Sauce.”
