Fall Dinner Series Continues Thursday

Students in the hospitality administration program at Arkansas Tech University will serve a meal inspired by the tastes of Louisiana during the Thursday, Nov. 1, installment of the 2012 fall dinner series at Williamson Hall Dining Room.

Students in the hospitality administration program at Arkansas Tech University will serve a meal inspired by the tastes of Louisiana during the Thursday, Nov. 1, installment of the 2012 fall dinner series at Williamson Hall Dining Room.

Reserved seating times for the meal are available from 6-7 p.m. Cost for the meal will be $17.95 plus tax. All gratuities are invested in the Walters-Williams Scholarship.

Below are the menu items, with descriptions of each course as provided by the hospitality administration program:

  • Crab Fondue
    “A blend of fresh lump crab meat, cream cheese and white wine served with toasted French baguette”
  • Louisiana Sunburst Salad
    “Mixed baby greens served with dried cranberries, toasted almonds and blue cheese, drizzled with raspberry vinaigrette”
  • Bayou Crawfish and Shrimp Etouffee
    “Crawfish tails and gulf shrimp smothered in a buttery blend of onions, bell peppers, celery and a mildly spicy creamy tomato sauce served with steamed rice and cheesy bread”
  • Bourbon Pecan Pie
    “Freshly baked bourbon pecan pie served warm from the oven topped with a scoop of vanilla bean ice cream and bourbon whiskey sauce”
