Fall Dinner Series Concludes Thursday Night

Another semester of the Arkansas Tech University Department of Parks, Recreation and Hospitality Administration fall dinner series will come to an end with a meal at Williamson Hall Dining Room on Thursday, Dec. 1.

Reserved seating times for Thursday’s dinner are available from 6-7 p.m.

Reservations may be made by calling (479) 968-0378 or by sending e-mail to khall18@atu.edu. Members of the campus community and beyond are invited to attend.

Cost for the Nov. 17 meal will be $19.95 per person (plus tax). All gratuities are invested in the Walters-Williams Scholarship.

Below is the menu for the Thursday, Dec. 1, dinner at Williamson Hall:

Southern Style Collard Green Wontons (Deep-Fried Collard Green Wontons Served with a Sweet Chili Sauce)

Chicken Dumpling (A Creamy Soup of Celery, Carrots, Onions, Chicken and Dumplings)

Red Wine Braised Beef Short Ribs (Slowly Braised Beef Short Ribs in Red Wine, Carrots and Fresh Herbs; Served with Creamy Parmesan Polenta)
Pan Seared Chicken Breast (Pan Seared Chicken Breast with Rosemary, Thyme, Parsley, and Chive Topped with a Cabernet Peppercorn Sauce; Served with Potato-Winter Vegetable Hash)

Vanilla Wafer Cake (Bundt Cake Made with Crushed Vanilla Wafers Drizzled with a Bourbon Whiskey Caramel Sauce and Topped with Toasted Coconut Flakes)
