Guest Chef to Prepare PRHA Dinner Thursday

Chef Michael McGovern will prepare a four-course meal for guests at the Arkansas Tech University Department of Parks, Recreation and Hospitality Administration fall dinner series event on Thursday, Oct. 8.

Seating at Williamson Hall Dining Room will be available from 6-7 p.m. Reservations may be made by calling (479) 968-0378 or sending e-mail to prha@atu.edu. Cost for the meal will be $25 plus tax per person.

Members of the Arkansas Tech campus community and residents of the surrounding area are invited to attend.

McGovern is a graduate of The Culinary Institute of America in Hyde Park, N.Y. He completed his externship at Commander’s Palace in New Orleans, La., before embarking upon a career that has included work as an international consultant for resorts, food writer, adjunct professor and chef for five-star restaurants and four-star hotels.

A 25-year culinary veteran, McGovern is a private chef in Fayetteville. He owns a culinary consulting firm. He and his wife, Sunny, live in Rogers with their two children.

Below is the menu for the meal at Williamson Hall on Oct. 8:

First Course
Butternut Squash Soup (with truffle cream and roasted pepitas)

Second Course
Autumn Apple Salad (Gala and Granny Smith apples, meculin mix greens, toasted walnuts, cherve cheese, with apple cider vinaigrette)

Main Course
Bacon Wrapped Pork Tenderloin (Applewood smoked bacon, Andouille sausage cassoulet, baby spinach, with a honey black pepper glaze)

Dessert
White Chocolate Bread Pudding (With a pumpkin spice bourbon cream sauce and Chantilly cream)
